- 2 lbs carrots
- 6 large eggs, beaten
- ¾ cup sugar
- 1 cup butter, melted
- 6 tablespoons flour
- 2 teaspoons vanilla
- 2 teaspoons baking powder
- Preheat oven to 350.
- Steam carrots until tender. Puree in food processor.
- Mix sugar, flour, baking powder, butter, pureed carrots, eggs, and vanilla in bowl.
- Spoon into buttered 2 quart casserole.
- Bake for 45-50 minutes
