chunky black-eyed pea salsa

Ingredients

  • 2 cans black eyed peas, drained and rinsed
  • 1 can white corn, drained and rinsed
  • 1 can Rotel original
  • 1 can petite diced tomatoes, drained
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 4 green onions, diced
  • 2 jalapenos, seeded and diced
  • ½ cup fresh cilantro, chopped
  • 1 small bottle Wishbone Italian Dressing

Instructions

  1. Combine all ingredients except dressing. Mix well. Add dressing.
  2. Stir to combine. Chill for at least one hour. Serve with chips.
  3. This dip keeps in the refrigerator for several days.
