There is nothing much better than freshly snapped asparagus. But, asparagus is tricky to serve as a vegetable. It can be hard to time steaming or baking it and you might end up with an overdone, stringy, chewy mess!

We make this soup when asparagus all the time, and it is still one of our favorite soups. This one in particular is so healthy and creamy without the cream! Just all veggies cooked and pureed with broth. Very refreshing and never disappoints. Enjoy!

Ingredients

  • 4lbs asparagus, coarsely chopped, reserve tips
  • 2 medium yellow onions, coarsely chopped
  • 1 stick unsalted butter
  • 4 cloves garlic
  • 1 cup carrots, coarsely chopped
  • 1 cup fresh parsley, chopped (stems removed)
  • ½ cup packed basil
  • 1 tablespoon tarragon, dried
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 8 cups chicken broth
  • tomatoes, sour cream

Notes

  1. In large soup pot, saute onion and garlic in butter until soft.
  2. Add chicken broth, bring to boil.
  3. Add asparagus, carrots, parsley, basil, tarragon, salt and pepper.
  4. Simmer until tender, approximately one hour.
  5. Puree with immersion blender.
  6. Place back on stove, add reserved tips and heat through.
  7. Garnish with sour cream and chopped tomatoes
  8. Serve and enjoy!
