homemade waffles

- 2 ½ cups flour
- 4 teaspoon baking powder
- ¾ teaspoon salt
- 1 ½ tablespoons sugar
- 2 eggs
- 2 ¼ cups milk
- ¾ cup canola oil
- Preheat waffle iron. Mix dry ingredients. Combine eggs, milk and oil in separate bowl. Combine liquid and dry ingredients just before baking. Beat with wire whisk until almost. Batter may have a few lumps. Brush waffle iron with canola oil. Ladle batter into waffle iron.
- Follow manufacturer’s instructions for cooking time on waffle iron. I suggest brushing iron with oil in between making each waffle.
- Leftover waffles layered between wax paper can be stored in refrigerator for several days.
