mexican street corn with cotija cheese and cilantro

Ingredients

  • 8 ears fresh corn on the cob
  • 3 tablespoons mayonnaise
  • 3 tablespoons sour cream
  • 2 tablespoons lime juice
  • 2 teaspoons chilli powder
  • pinch of cayenne pepper
  • ½ cup crumbled cotija cheese
  • ½ cup fresh cilantro, chopped

Instructions

  1. Grill corn, remove from cob and place in a serving bowl.
  2. In separate bowl, mix mayonnaise, sour cream, lime juice, chili powder and cayenne pepper. Toss with corn. Add cheese and cilantro.
  3. Toss lightly.
