wild rice soup with chicken and herbs

Ingredients

  • 4 tablespoons butter
  • 1 cup onion, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 8 cups low sodium chicken broth
  • 1 package wild rice (we use Uncle Ben’s)
  • 4 cups cooked chicken, shredded
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 4 cups milk

Instructions

 
  1. Melt butter in stockpot, add onion, carrot and celery and cook until softened.
  2. Add broth, rice, and seasoning packet from rice. Bring to a boil and reduce heat to simmer.
  3.  Cook until rice is done, about 30 minutes. Add chicken.
  4. In separate pan, melt butter, add flour and stir until paste forms. Add milk, heat until sauce thickens. Add to chicken and wild rice mixture.
  5. Mix thoroughly to combine and cook on low heat until heated through.
