wild rice soup with chicken and herbs

- 4 tablespoons butter
- 1 cup onion, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 8 cups low sodium chicken broth
- 1 package wild rice (we use Uncle Ben’s)
- 4 cups cooked chicken, shredded
- 4 tablespoons butter
- 4 tablespoons flour
- 4 cups milk
- Melt butter in stockpot, add onion, carrot and celery and cook until softened.
- Add broth, rice, and seasoning packet from rice. Bring to a boil and reduce heat to simmer.
- Cook until rice is done, about 30 minutes. Add chicken.
- In separate pan, melt butter, add flour and stir until paste forms. Add milk, heat until sauce thickens. Add to chicken and wild rice mixture.
- Mix thoroughly to combine and cook on low heat until heated through.
