Instructions
Preheat oven to 450 degrees.
Dissolve yeast in warm water (110-115 degrees).
When yeast is dissolved, add olive oil, fine sea salt, and sugar.
Mix well.
Using a stand mixer, add flour, 1 cup at a time, mixing well after each addition.
Mix for 3-5 minutes until smooth.
Add more flour if dough is sticky.
Remove from bowl and hand-knead for 3 minutes on lightly floured surface.
Put into lightly oiled bowl, cover with plastic wrap and let rise until doubled in size, approximately 30 minutes.
Mix poppy seeds and coarse kosher salt.
Make olive oil seasoning and set aside.
After bread has doubled in size, divide into four long, thin loaves, approx. 8 inches long.
Spread poppy seed/salt mixture on board and roll loaves in it.
Place loaves on parchment lined cookie sheet.
Cut each loaf into 5-6 rolls.
Brush with olive oil seasoning.
Let sit for 30 minutes before baking.
Bake at 450 for 10 minutes.
Reduce heat to 400 and bake for an additional 6-8 minutes or until golden brown.
