We have a weakness for good bread, and we will be honest that we do not make bread very often. But we will make these rolls. Are you an everything bagel lover? Well then these rolls are for YOU! Imagine everything bagel BUT WAY BETTER on the crustiest but fluffy roll, drizzled with olive oil and baked to perfection. We make these for every holiday and also upon request. There is nothing better to soak up sauces, pair with meat or use as a mini sandwich with leftovers. Enjoy!

Ingredients

Rolls:
  • 1 package yeast
  • 1 ½ cups water
  • 2 tablespoons olive oil
  • 1 tablespoon fine sea salt
  • 1 tablespoon sugar
  • 4 cups bread flour
  • 2 tablespoons poppy seeds
  • 1 tablespoon coarse kosher salt
Olive Oil Seasoning:
  • 1 cup olive oil
  • 1 garlic clove
  • 2 T basil
  • 2 T oregano
  • 1/8 t coarse kosher salt

Instructions

  1. Preheat oven to 450 degrees.
  2. Dissolve yeast in warm water (110-115 degrees).
  3. When yeast is dissolved, add olive oil, fine sea salt, and sugar.
  4. Mix well.
  5. Using a stand mixer, add flour, 1 cup at a time, mixing well after each addition.
  6. Mix for 3-5 minutes until smooth.
  7. Add more flour if dough is sticky.
  8. Remove from bowl and hand-knead for 3 minutes on lightly floured surface.
  9. Put into lightly oiled bowl, cover with plastic wrap and let rise until doubled in size, approximately 30 minutes.
  10. Mix poppy seeds and  coarse kosher salt.
  11. Make olive oil seasoning and set aside.
  12. After bread has doubled in size, divide into four long, thin loaves, approx. 8 inches long.
  13. Spread poppy seed/salt mixture on board and roll loaves in it.
  14. Place loaves on parchment lined cookie sheet.
  15. Cut each loaf into 5-6 rolls.
  16. Brush with olive oil seasoning.
  17. Let sit for 30 minutes before baking.
  18. Bake at 450 for 10 minutes.
  19. Reduce heat to 400 and bake for an additional 6-8 minutes or until golden brown.

Notes

Watch carefully as ovens vary. Do not overcook!
