browned butter cheesy squash bake

- 6 medium yellow squash, sliced
- 6 tablespoons butter, divided
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- ¼ cup chives, chopped
- ¼ cup parsley, chopped
- 2 cups breadcrumbs, divided
- ½ cup shredded parmesan cheese
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ½ teaspoon fine sea salt
- ¼ teaspoon garlic powder
- Preheat oven to 350 degrees.
- Cook squash: add slices to boiling water in a deep oven proof skillet and cook 5-8 minutes, covered. Remove from skillet using slotted spoon, discard water.
- Brown 3 T of butter in same skillet. Reduce heat. Add onion and garlic. Saute until tender. Add chives and parsley. Add squash. Heat thoroughly, being careful not to break up squash.
- Remove from heat, add ½ cup breadcrumbs, parmesan and cheddar cheeses, sour cream and salt. Place in 13 x 9 baking dish or oven proof skillet of similar size.
- Brown remaining 3 T of butter. Remove from heat. Mix in breadcrumbs and garlic powder. Sprinkle mixture over squash.
- Bake at 350 for 30 minutes or until bubbly.
