It is time to start thinking about those Thanksgiving side dishes, so wer going to share a few of our favorites this week. Squash is always a tricky one for me because people in our family are not terribly fond of anything squash! This squash bake is different though, we promise, and they all LOVE it. We have used yellow squash in this recipe. Its mild flavor and slightly firm texture works really well in a casserole. We have combined it with a flavorful cheese sauce and topped it with brown butter bread crumbs. This can be made it advance, just freeze or refrigerate it before you bake it!

Ingredients

  • 6 medium yellow squash, sliced
  • 6 tablespoons butter, divided
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • ¼ cup chives, chopped
  • ¼ cup parsley, chopped
  • 2 cups breadcrumbs, divided
  • ½ cup shredded parmesan cheese
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ½ teaspoon fine sea salt
  • ¼ teaspoon garlic powder

Instructions

  1. Preheat oven to 350 degrees.
  2. Cook squash: add slices to boiling water in a deep oven proof skillet and cook 5-8 minutes, covered. Remove from skillet using slotted spoon, discard water.
  3. Brown 3 T of butter in same skillet. Reduce heat. Add onion and garlic. Saute until tender. Add chives and parsley. Add squash. Heat thoroughly, being careful not to break up squash.
  4. Remove from heat, add ½ cup breadcrumbs, parmesan and cheddar cheeses, sour cream and salt. Place in 13 x 9 baking dish or oven proof skillet of similar size.
  5. Brown remaining 3 T of butter. Remove from heat. Mix in breadcrumbs and garlic powder. Sprinkle mixture over squash.
  6. Bake at 350 for 30 minutes or until bubbly.
