cauliflower and bacon salad with parmesan dressing

Ingredients

  • 2 heads cauliflower, coarsely chopped
  • 1 head iceberg lettuce, coarsely chopped
  • I medium red onion, finely chopped
  • 2 lbs bacon, cooked and chopped
  • 1 cup grated parmesan
  • 6 tablesoons olive oil
  • 1 teaspoon fresh cilantro chopped

Instructions

  1. Combine cauliflower, iceberg lettuce and red onion.
  2. Add ¾ of the cooked bacon. Mix well.
  3. Mix parmesan, olive oil and cilantro together. Add to salad. Mix well.
  4. Sprinkle remaining bacon on top. Serve immediately
