This salad is an oldie but a goodie. This salad is our attempt to make iceberg interesting.
The textures in this salad are great – iceberg lettuce tossed with crunchy cauliflower, crispy, salty bacon, and red onion. It really is a fantastic combination, you won’t be able to stop eating it. The parmesan and olive oil dressing is the perfect complement to the lettuce and bacon.

Ingredients
- 2 heads cauliflower, coarsely chopped
- 1 head iceberg lettuce, coarsely chopped
- I medium red onion, finely chopped
- 2 lbs bacon, cooked and chopped
- 1 cup grated parmesan
- 6 tablesoons olive oil
- 1 teaspoon fresh cilantro chopped
Instructions
- Combine cauliflower, iceberg lettuce and red onion.
- Add ¾ of the cooked bacon. Mix well.
- Mix parmesan, olive oil and cilantro together. Add to salad. Mix well.
- Sprinkle remaining bacon on top. Serve immediately
