crunchy romaine and broccoli toss

Ingredients

  • 4 cups broccoli florets, coarsely chopped
  • 4 cups romaine lettuce, cut into pieces
  • 2 packages ramen noodles, broken into pieces
  • 4 green onions, chopped
  • ½ cup walnuts, chopped
  • ½ cup olive oil
  • ¼ cup sugar
  • ¼ cup apple cider vinegar
  • 2 teaspoons soy sauce
  • 2 tablespoons butter

Instructions

  1. Saute ramen noodles in butter until toasted (discard seasoning packet). Remove from heat and cool.
  2. Combine olive oil, vinegar, sugar and soy sauce in jar with lid.
  3. Shake vigorously to emulsify dressing. Place broccoli, romaine and green onions in bowl.
    Just before serving, toss with dressing. Scatter toasted ramen and walnuts on top.
