Are you a ramen noodle fan? We will admit, we are not technically not full-fledged fans. But some of our family members are, so we did have them in the pantry from time to time. We will admit to loving the noodles though but they MUST be toasted, in lots of butter (without the seasoning packet). We started adding the toasted noodles to salad, and this crunchy romaine and broccoli salad has become one of our favorites. Saute those noodles in a little bit of butter! (remember, skip the seasoning packet) Who doesn’t love crunchy romaine and broccoli? This salad has a lot of crunch and is super satisfying for all. Great way to get your greens! Be sure to wait to add the ramen noodles until just before serving, otherwise they will lose their crunch!

Ingredients
- 4 cups broccoli florets, coarsely chopped
- 4 cups romaine lettuce, cut into pieces
- 2 packages ramen noodles, broken into pieces
- 4 green onions, chopped
- ½ cup walnuts, chopped
- ½ cup olive oil
- ¼ cup sugar
- ¼ cup apple cider vinegar
- 2 teaspoons soy sauce
- 2 tablespoons butter
Instructions
- Saute ramen noodles in butter until toasted (discard seasoning packet). Remove from heat and cool.
- Combine olive oil, vinegar, sugar and soy sauce in jar with lid.
- Shake vigorously to emulsify dressing. Place broccoli, romaine and green onions in bowl.
Just before serving, toss with dressing. Scatter toasted ramen and walnuts on top.
