double chocolate chunk zucchini bundt cake

Ingredients

  • 2 ½ cups of flour
  • ½ cup unsweetened cocoa
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butter, softened
  • ¾ cup sugar
  • ¾ cup dark brown sugar, packed
  • 3 eggs
  • 1 tablespoon vanilla
  • ½ cup buttermilk
  • 2 cups grated zucchini (about 1 medium zucchini)
  • 1 cup semi-sweet chocolate chunks

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix flour, cocoa, baking powder, baking soda and salt.
  3. Mix butter and sugars. Add eggs and vanilla and mix well.
  4. Combine dry with wet in several additions. Mix well.
  5. Add buttermilk and mix well. Fold in zucchini and chocolate chunks.
  6. Bake at 350 for 50-60 minutes
