mini ham cocktail sandwiches

- 24 small dinner rolls (I used King’s Hawaiian)
- 1 lb deli ham, thinly sliced
- 12 slices baby swiss cheese
- 6 tablespoons butter
- 2 shallots, finely chopped
- 4 teaspoons pepper
- 2 tablespoons poppy seeds
- 4 tablespoons stone ground mustard
- Preheat oven to 350 degrees.
- Place rolls in 9x 13 baking pan. If the rolls come in a foil pan, you can leave them in the pan they came in. Slice rolls in half and remove tops. Cut cheese and meat into squares and place on rolls
- Saute shallot in butter. Add pepper and poppy seeds. Remove from heat. Add mustard. Drop approx ½ t onto cheese and meat. Place tops back on rolls. Brush tops of rolls with remaining poppy seed/mustard mixture.
- Bake for 20 minutes, until heated through and cheese melted.
