oven baked apricot chicken

Ingredients

 

  • 6 chicken breast halves
  • 1 13 oz jar apricot preserves ( I like Bonne Maman)
  • 1 15 oz bottle Russian dressing (I like Wish-Bone)
  • 3 cloves garlic, minced
  • ¼ teaspoon onion powder
  • ¼ teaspoon parsley flakes
  • ⅛ teaspoon pepper
  • olive oil

Instructions

  1. Preheat oven to 375 degrees.
  2. Spread a small amount of olive oil in cast iron skillet or in a 9 x 13 pan.
  3. Mix preserves, dressing, and spices. Add chicken breasts to pan. Pour sauce over chicken. Bake uncovered for 30-40 minutes. Serve over rice.
