We cannot take complete credit for this recipe because our grandmother made it almost weekly. We changed up the ingredients up slightly by omitting the onion soup mix in the original recipe. We stick with apricot preserves and Russian dressing and add a few favorite spices. The Russian dressing is easy to find and should be available at most large grocery stores. Our favorite is this one by Wish-Bone. This recipe is as simple and satisfying as you can get. You can keep the ingredients on hand for when you are in a pinch and need a quick easy meal. (You can always find a bottle of Russian dressing and a jar of apricot preserves in our pantry!) The flavor of this meal is so unique. (It is not as sweet as you might think!) We serve it over white rice, and be sure to spoon a generous amount of sauce on your rice!
First things first, get that sauce made. This takes only about a minute! Stir in the spices and it is ready to go! I use a 9 inch deep dish skillet for this recipe and fan out the chicken breasts. Next, pour the sauce over the chicken and bake. It’s that easy! Enjoy!

Ingredients
- 6 chicken breast halves
- 1 13 oz jar apricot preserves ( I like Bonne Maman)
- 1 15 oz bottle Russian dressing (I like Wish-Bone)
- 3 cloves garlic, minced
- ¼ teaspoon onion powder
- ¼ teaspoon parsley flakes
- ⅛ teaspoon pepper
- olive oil
Instructions
- Preheat oven to 375 degrees.
- Spread a small amount of olive oil in cast iron skillet or in a 9 x 13 pan.
- Mix preserves, dressing, and spices. Add chicken breasts to pan. Pour sauce over chicken. Bake uncovered for 30-40 minutes. Serve over rice.
