peppermint bark three ways

- 12 oz semi-sweet, dark or milk chocolate chips (pick your favorite)
- ½ teaspoon peppermint extract
- 12 oz white chocolate chips
- 5 candy canes, crushed
- Line a cookie sheet with parchment paper.
- Melt the semi-sweet, dark or milk chocolate in a double boiler on stove top (a glass bowl can be used over a pan of boiling water).
- Stir constantly, add peppermint extract, and remove from heat just before fully melted.
- Stir vigorously until all pieces are melted. Spread the chocolate on parchment paper into a rectangle, approximately 10 x 12.
- Refrigerate until set, about 15-20 minutes. Melt white chocolate in double boiler.
- Spread over dark chocolate. Sprinkle candy canes over white chocolate.
- Allow to harden. Break into pieces or cut with sharp knife.
