tortellini soup with chicken sausage and spinach

- 1 tablespoon olive oil
- 4 cloves garlic
- 1 large yellow onion, diced
- 1 lb chicken sausage, sliced into rounds
- 1 28 oz can crushed tomatoes
- 8 cups chicken broth
- ½ teaspoon crushed red pepper
- 20 oz fresh cheese tortellini
- 1 15 oz can Great Northern Beans, drained and rinsed
- 3 cups packed baby spinach
- Freshly grated parmesan
- Heat olive oil in large stock pot.
- Add garlic and onion. Cook until translucent.
- Add sausage, and cook until browned.
- Add crushed tomatoes, red pepper flakes and 6 cups of broth. Bring to a boil.
- Add beans and tortellini, reduce heat and simmer 15-20 minutes.
- Add 2 additional cups of broth to thin stew. Add spinach, cook 2-3 minutes.
- Ladle into bowls and garnish with grated parmesan. Enjoy!
