It’s January, and it is pretty darn cold today. In the winter, we love starting the week off with a big pot of soup. Food for your mood is a thing, right? Well, we are in the mood for soup on Mondays in the winter so we can enjoy it again during the week. Instant mood enhancer, right? This soup is more like a stew, but not really, Maybe more like a pasta dish…? Actually… not really. Let’s just leave it that it has pretty much everything in it that you need to satisfy you and your family on a cold blustery Monday. Fresh tortellini, mountains of spinach, and chicken Italian sausage to give it a little spice and put this soup on our winter meal rotation. It keeps in the refrigerator for several days and reheats very well. Oh and added bonus, this soup goes together very quickly. It does not need all day to simmer. So, if you are trying to come up with dinner at 3pm, put this on your menu!

tortellini soup with chicken sausage and spinach

Ingredients

  • 1 tablespoon olive oil
  • 4 cloves garlic
  • 1 large yellow onion, diced
  • 1 lb chicken sausage, sliced into rounds
  • 1 28 oz can crushed tomatoes
  • 8 cups chicken broth
  • ½ teaspoon crushed red pepper
  • 20 oz fresh cheese tortellini
  • 1 15 oz can Great Northern Beans, drained and rinsed
  • 3 cups packed baby spinach
  • Freshly grated parmesan

Instructions

  1. Heat olive oil in large stock pot.
  2. Add garlic and onion. Cook until translucent.
  3. Add sausage, and cook until browned.
  4. Add crushed tomatoes, red pepper flakes and 6 cups of broth. Bring to a boil.
  5. Add beans and tortellini, reduce heat and simmer 15-20 minutes.
  6. Add 2 additional cups of broth to thin stew. Add spinach, cook 2-3 minutes.
  7. Ladle into bowls and garnish with grated parmesan. Enjoy!
