We live off these for breakfast and snacks or when we just need a little something sweet. They check a lot of boxes: easy to make, satisfying to your sweet tooth, and just the right amount to fill you up during the -the 3pm hangries…! They are great to bring to a party or picnic, keep for days in the refrigerator or several months in the freezer!

Ingredients

 

  • 2 cups old fashioned oats
  • 1 1/3 cup toasted coconut
  • 1 cup mini chocolate chips
  • 1 cup ground flax seed
  • 2 tablespoons chia seeds
  • 2 tablespoons vanilla
  • 2/3 cup honey
  • 1 cup creamy peanut butter

Instructions

  1. Mix dry ingredients in bowl.
  2. Add honey and peanut butter.
  3. Mix well.
  4. Refrigerate for 1 hour
  5. Form into tablespoon sized balls. 
  6. Store in refrigerator for several days or freezer for several months.
