Looking for something fabulous to serve for the big game this weekend? Game day is looking really good right now especially if you whip up a batch (or two) of these buffalo chicken flautas. Tbh, these are simple and nothing fancy, but they are great game day food. You can cook your own chicken or make things easy and pick up a rotisserie chicken (or two). We made these in an air fryer but you can also bake them in the oven! So, yes they are NOT fried and a wee bit healthier. Serve these with generous amounts of ranch (homemade or store bought) and chunky guacamole. Our easy guacamole recipe is linked here. We really love using wheat and corn tortillas from La Tortilla Factory for this recipe, linked here. They are just the perfect size and texture. But, you can use any flour tortilla or even egg roll wrappers!

Ingredients

  • 4 cups cooked chicken, shredded
  • ½ cup greek yogurt
  • ¾ cup buffalo sauce ( I like Frank’s RedHot Sauce)
  • ¼ teaspoon salt
  • 2 teaspoon garlic powder
  • ½ cup green onions, sliced
  • 2 cups shredded cheese, cheddar or monterey jack work really well
  • 14 tortillas, approx 6 inches in size
  • Avocado or olive oil spray

Instructions

  1. Combine buffalo sauce, yogurt, salt and green onions in medium bowl. Mix well. Add chicken, mixing well to combine. Fold in cheese.
  2. Assemble flautas by spooning approximately 2-3 tablespoons of filling onto each tortilla. Roll tightly
  3. Air Fryer method: Spray flautas lightly with avocado oil. Place in air fryer basket and cook at 400 for 7 minutes
  4. Oven method: Preheat oven to 425 degrees. Spray a cookie sheet with avocado oil and place flautas on sheet. Spray flautas lightly with avocado oil. Bake 15-20 minutes.
  5. Serve with ranch dressing and guacamole.
