This is our carb-optional Italian hoagie salad, and we make this for the many sporting events that we watch with friends and family on the weekends. We all love a good ‘ole Italian hoagie right? Well this is basically an Italian hoagie salad served with or without the bread! So, those in our family who are carb-conscious can skip the bread. But, of course, we always have a hefty portion of good, crusty sourdough bread to serve for those who want it. This salad does not have a lot of dressing on it, and tastes incredibly fresh. The dressing is our own creation of olive oil and my favorite spices – don’t skip the crushed red pepper- it is key!! Want to make it ahead? Chop everything up, mix it together, and add the dressing right before serving. Double (or even triple) this recipe for a large crowd!

Ingredients
- 1 package iceberg lettuce shreds or ½ head of iceberg lettuce, finely chopped
- ½ lb thinly sliced ham, chopped
- ½ lb thinly sliced turkey, chopped
- 10 slices genoa salami, chopped (about 2 oz)
- ½ onion, finely chopped
- 12 slices provolone cheese, chopped (about 8 oz)
- 2 tablespoons pepperoncini, finely chopped
- 2 tablesoons olive oil
- 2 teaspoons oregano
- 2 teaspoons basil
- ¼ crushed red pepper
- 2 loaves sourdough bread, cubed
Instructions
- Mix lettuce, onion, meats, cheese, and pepperoncini in large bowl. Mix olive oil, oregano, basil and crushed red pepper in small bowl. Drizzle dressing over salad and toss.
- Serve with bread.
- Enjoy!
