This is our carb-optional Italian hoagie salad, and we make this for the many sporting events that we watch with friends and family on the weekends. We all love a good ‘ole Italian hoagie right? Well this is basically an Italian hoagie salad served with or without the bread! So, those in our family who are carb-conscious can skip the bread. But, of course, we always have a hefty portion of good, crusty sourdough bread to serve for those who want it. This salad does not have a lot of dressing on it, and tastes incredibly fresh. The dressing is our own creation of olive oil and my favorite spices – don’t skip the crushed red pepper- it is key!! Want to make it ahead? Chop everything up, mix it together, and add the dressing right before serving. Double (or even triple) this recipe for a large crowd!

Ingredients

  • 1 package iceberg lettuce shreds or ½ head of iceberg lettuce, finely chopped
  • ½ lb thinly sliced ham, chopped
  • ½ lb thinly sliced turkey, chopped
  • 10 slices genoa salami, chopped (about 2 oz)
  • ½ onion, finely chopped
  • 12 slices provolone cheese, chopped (about 8 oz)
  • 2 tablespoons pepperoncini, finely chopped
  • 2 tablesoons olive oil
  • 2 teaspoons oregano
  • 2 teaspoons basil
  • ¼ crushed red pepper
  • 2 loaves sourdough bread, cubed

Instructions

  1. Mix lettuce, onion, meats, cheese, and pepperoncini in large bowl. Mix olive oil, oregano, basil and crushed red pepper in small bowl. Drizzle dressing over salad and toss.
  2. Serve with bread.
  3. Enjoy!

Notes

This recipe doubles well for a crowd 🙂
