Ahhhh tortellini… don’t you love it? Tortellini is such a versatile pasta and a short cut if you want a cheese filled pasta meal but you don’t have the time to fill the pasta! Fresh tortellini is available at most grocery stores these days, and there are so many ways you can use it in a meal. We created this recipe when we needed some cheesy pasta but did not want the heaviness of red sauce. Don’t worry, this is still a cozy, hearty meal but it feels a little lighter. We love to get the tortellini that is a mixture of regular and spinach pasta because it makes this dish look as incredible as it tastes! But you can use any cheese-filled tortellini for this. After you cook the tortellini and the chicken, you layer it in a baking dish with cheese and then drench it in a cheesy sauce which is spoon-licking good. Bake it so that everything melts together, and you have a cozy meal.

Ingredients

  • 20 oz fresh spinach and cheese tortellini
  • 2 cups mixed cheese blend, divided
  • 4 tablespoons olive oil
  • 4 chicken breast halves, cut into strips
  • ¾ cup onion
  • 1 cup chicken broth
  • 2 tablespoons flour
  • ¾ cup sour cream
  • salt and pepper to taste

Instructions

  1. Preheat oven to 300 degrees.
  2. Boil tortellini until pasta is al dente.
  3. Drain and place in 9 X 13 baking dish, or something of similar size.
  4. Layer 1 cup of cheese over tortellini.
  5. Season chicken with salt and pepper and saute in olive oil on low to medium heat until no longer pink. Remove from pan and layer over cheese and tortellini.
  6. Saute onion in same pan until onion is translucent. Add chicken broth.
  7. Mix in flour. Add remaining 1 cup of cheese, stir until melted, whisking out any lumps.
  8. Add sour cream and stir until well blended. Pour over chicken and tortellini mixture. Cover and bake for 45 minutes. Serve and enjoy!

Notes

 

This recipe can be made ahead. If baking from refrigerator, bake 15 minutes longer.
