5 minute spicy chorizo queso

Did someone say queso? With chorizo? Who doesn’t love a bowl of cheesy, creamy, spicy queso, especially in the fall. Think of football Saturdays! You must have this in front of your tv cheering on your favorite team. We make queso ALL THE TIME. Our entire family would eat queso everyday if we made it. It took us a while to perfect this recipe, and it is the best – full of just the right amount of veggies and spicy chorizo. It is almost a meal in itself. Double the recipe. One batch won’t last long!

5 minute spicy chorizo queso

Ingredients

  • 2 cups grated pepper jack
  • 4 oz cream cheese, cut into cubes
  • 2 kumatos, chopped (can use regular tomatoes too)
  • 1/3 large yellow onion, chopped
  • 1 jalapeno, seeded and chopped
  • 2 links of chorizo sausage, casing removed, browned and broken into small pieces
  • ¼ cup fresh cilantro
  • milk to thin queso to desired consistency

Instructions

  1. Arrange all ingredients, except cilantro and milk, in separate piles in a 12 inch frying pan.
  2. Heat on low for about 3-4 minutes.
  3. Stir everything together, heat until melted through, about another minute.
  4. Garnish with cilantro and thin with milk if necessary.
  5. Serve with chips.
