We are a spicy, saucy family. The spicier the sauce, the better. We started making our own hot sauce for my homemade wings. But while wings are great – they are a little hard to eat. We decided to try and create that spicy, saucy, chicken taste in a meatball. Well we did, and they were a huge hit. Don’t forget the homemade ranch and carrots and celery too. Enjoy!

Ingredients

For the sauce:
  • 2/3 cup hot sauce
  • 1 stick butter
  • ½ t fine sea salt
For the meatballs:
  • 2 lbs ground chicken (or turkey)
  • 2 eggs
  • 2/3 cup panko style bread crumbs
  • 2/3 cup finely chopped celery
  • ½ cup green onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspooon onion powder

Instructions

 

  1. Preheat oven to 425 degrees.
  2. Melt butter, hot sauce and salt together in small saucepan, set aside.
  3. In a bowl, mix eggs, panko, celery, green onion, garlic and onion powder.
  4. Add chicken, mix well. Mix in ½ cup of hot sauce. Reserve the rest.
  5. Spray olive oil spray on 10 X 15 pan.
  6. Form meatballs with approximately 1 ½ tablespoons of mixture.
  7. Mixture will be moist, so work quickly.
  8. Bake at 425 until golden, about 15-17 minutes.
  9. Arrange on platter, drizzle with remaining hot sauce.
