We are a spicy, saucy family. The spicier the sauce, the better. We started making our own hot sauce for my homemade wings. But while wings are great – they are a little hard to eat. We decided to try and create that spicy, saucy, chicken taste in a meatball. Well we did, and they were a huge hit. Don’t forget the homemade ranch and carrots and celery too. Enjoy!
Printbuffalo chicken meatballs with homemade ranch dressing

Ingredients
For the sauce:
- 2/3 cup hot sauce
- 1 stick butter
- ½ t fine sea salt
For the meatballs:
- 2 lbs ground chicken (or turkey)
- 2 eggs
- 2/3 cup panko style bread crumbs
- 2/3 cup finely chopped celery
- ½ cup green onion, finely chopped
- 4 cloves garlic, minced
- 1 teaspooon onion powder
Instructions
- Preheat oven to 425 degrees.
- Melt butter, hot sauce and salt together in small saucepan, set aside.
- In a bowl, mix eggs, panko, celery, green onion, garlic and onion powder.
- Add chicken, mix well. Mix in ½ cup of hot sauce. Reserve the rest.
- Spray olive oil spray on 10 X 15 pan.
- Form meatballs with approximately 1 ½ tablespoons of mixture.
- Mixture will be moist, so work quickly.
- Bake at 425 until golden, about 15-17 minutes.
- Arrange on platter, drizzle with remaining hot sauce.
