We are calling this the first in our series of cookie monster posts. We have many cookie monsters in our house, and we go all out to keep the cookie monsters happy around the holidays. These cookies are delicious and really fun to make. The cookie is soft and chocolatey, and the crispy gooey marshmallow center is the best surprise! You can make this batter, roll them into marshmallow-filled balls, refrigerate and bake them as needed!

Ingredients

  • 8oz mini marshmallows, frozen for a minimum of 1 hour
  • 1 cup butter. softened
  • 1 cup sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla
  • 3 cups flour
  • ⅔ cup cocoa
  • ½ teaspoon baking soda
  • 1 cup mini chocolate chips

Instructions

  1. Beat butter and sugars. Add eggs and vanilla. In a separate bowl, combine flour, cocoa, and baking soda. Add to butter mixture in several increments. Mix well. Batter will be stiff, you may need to mix with hands. Fold in mini chocolate chips.
  2. Take approx 1 T of dough and wrap around 4-5 frozen mini marshmallows. Shape into a ball. Repeat with remaining dough. Marshmallows should be completely covered by dough. Place on parchment lined cookie sheet.
  3. Bake 8-10 minutes. Cool on racks before serving.
