Those who know us well know exactly who is to blame for our obsession with creme brulee! And yes, we are obsessed. It is just the perfect decadent dessert, right? Small in portion and totally, wonderfully decadent in taste. A special dinner would not be the same without some sort of creme brulee. While traditional creme brulee melts us (yes, we did just type that), chocolate creme brulee adds a twist to an already amazing dessert. We make this chocolate creme brulee for most special dinners. We have also been known to make both regular creme brulee and chocolate creme brulee. Try doing that – your guests will not believe their eyes! I love surprising my guests! For my chocolate creme brulee, we cut the heavy cream a little and use half and half because the chocolate makes it pretty rich. Creme brulee seems intimidating, but it really is not! You just need ramekins and eggs, sugar, cream and chocolate! We use oval ramekins and love them. The thickness of the creme brulee is perfect in the oval ramekin and you have more of the caramelized sugar crust! One of the greatest things about creme brulee is that you can make it ahead of time and leave caramelizing the sugar until just before serving!

Ingredients

  • 1 cup half and half
  • 1 cup heavy cream
  • 1 t vanilla
  • ⅔ cup dark chocolate chips
  • 5 large egg yolks
  • ⅓ cup sugar
  • Extra sugar for topping

Instructions

  1. Preheat oven to 325 degrees.
  2. Heat cream and half in half just to boiling in saucepan. Remove from heat. Add chocolate and stir until melted.
  3. Beat egg yolk and sugar in large mixing bowl. Add chocolate cream mixture in three increments. Mix well. Pour into four ramekins (approximately 6-7 oz size). Place ramekins in 9 x 13 baking dish. Carefully, fill dish with boiling water to ⅔ depth, taking care not to splash water onto the creme brulee mixture. Bake for 30 minutes until center is set. Let cool and carefully remove ramekins from baking dish They can be refrigerated at this point.
  4. Just before serving, sprinkle with sugar and caramelize with kitchen torch.
