Let’s go back to our brussels sprout obsession. Have we mentioned we love a good slider too? So, it is no surprise that we absolutely love these brussels sprout sliders. Salty bacon, creamy cheese on a brussels bun!? These are low carb and super easy to make and really fun to serve to your guests. This slider takes the meaning of slider to a new level! Once again, a combination of some of our very favorite things: bacon, brussels and cheese! We used havarti in this slider, it just melts perfectly and goes well with the salty bacon. These look time consuming, but really are not. These are wonderful both right out of the oven or at room temperature.

Ingredients

 

  • 12 oz bacon, cooked and broken into pieces
  • 20 large brussels sprouts
  • 8 oz havarti, cut into pieces
  • 4 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • ½ teaspoons garlic powder
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 375 degrees.
  2. Slice bottom stem off brussels and then slice in half crosswise. Try to keep halves together. Place on a foil-lined cookie sheet. Spray brussels with olive oil spray and season with salt and pepper. Roast for 20 minutes. Cool. Reduce heat in oven to 325.
  3. Make sliders. Place havarti and bacon on bottom of slider. Cover and repeat with remaining sliders. Make glaze. Combine olive oil, balsamic vinegar, garlic powder and salt. Drizzle over sliders. Place in 325 oven until heated through, about 5 minutes.
