We LOVE a good quick bread. The best thing about quick breads is that they are QUICK and often go together with things you already have in your pantry. Unexpected company?? Whip this up in one bowl and throw it in the oven. It’s slightly on the healthier side because we use applesauce instead of oil. This bread rings in Fall with a little bit of chocolate, and everything is more fun with a little chocolate, right? Pour yourself a tall glass of milk and enjoy this warm when the chocolate is gooey.

Ingredients

  • 1 ½ cups flour + 1 T for chocolate chips
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 t salt
  • 2 eggs
  • 1 cup sugar
  • 1 cup pumpkin
  • 1 ½ cups applesauce
  • 1 ½ cups semi-sweet chocolate chunks (or chips)

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix eggs, sugar, pumpkin, and applesauce in bowl.
  3. Add flour, cinnamon, soda, and salt.
  4. Toss 1 ¼ cups chocolate chunks in flour.
  5. Fold into batter.
  6. Pour into loaf pan.
  7. Press remaining ¼ cup of chocolate chunks into batter
  8. Bake at 350 for 45-50 mins.
