This dish is one of our favorites – it is usually on our monthly meal plan rotation. The ingredient list is not long, and it is another one of our simple go-tos that is always a pleaser. In all honesty, we keep frozen shrimp on hand at all times, which makes this meal even easier to throw together, since the remainder of the ingredients are pretty much all in the pantry, except the half and half and feta, which are easy to grab from the store! The key to this meal is to get everything together in a cast iron skillet on your stove to let the flavors combine well. Then, bake it off in the oven to melt the feta. The result is incredible – shrimp, artichokes, feta, tomato and basil…? Say no more. Serve this with some crusty bread to soak up the sauce.

Ingredients

  • 1 T olive oil
  • 1 medium onion, chopped
  • 1 14 oz can baby artichoke hearts, chopped
  • 1 cup canned diced tomatoes, further diced (or use petite diced)
  • ¼ cup white wine
  • 1 cup tomato sauce
  • ¼ cup half and half
  • 1 lb shrimp, peeled, deveined, tails removed
  • ½ teaspoon basil
  • ¾ cup crumbled feta

Instructions

  1. Preheat oven to 425 degrees.
  2. Heat olive oil in a large, ovenproof skillet.
  3. Add onions and cook until translucent.
  4. Add artichokes, tomatoes and wine, heating through. Remove from heat and add shrimp.
  5. Mix tomato sauce, basil and half and half in bowl.
  6. Add to shrimp mixture, stirring well to coat. Put back on low heat for 2 minutes.
  7. Remove from heat. Sprinkle feta on top.
  8. Bake for 15-20 minutes until shrimp are cooked. Serve and enjoy!
