Do you ever have days when you’re cooking dinner and people start lurking around the kitchen looking for food because they are hungry hours before you are ready to serve them? This pesto and pine nut pan-fried brie is the perfect way for you to ward off hangry people that can’t wait until dinner! This recipe is sooo easy, goes together in about 15 minutes and you have a delicious satisfying cheesy, pesto snack.

Pair it with slices of French baguette and you’re done! Everyone will leave you alone until dinner time!

Ingredients

  • ¾ cup pine nuts, toasted
  • ½ cup pesto
  • 1 6-inch wheel of brie, with rind
  • 1 egg, beaten
  • 1 cup panko bread crumbs
  • olive oil
  • French bread and crackers for dipping

Instructions

  1. Heat olive oil in pan
  2. Dip brie in beaten egg and dredge through panko. Place in olive oil and brown on both sides, being careful when turning over.
  3. Dilute pesto with olive oil to desired consistency, spread pesto on plate, place sautéed brie on pesto, sprinkle toasted pine nuts over brie
