This recipe is sooo easy, goes together in about 15 minutes and you have a delicious satisfying cheesy, pesto snack.

Ingredients
- ¾ cup pine nuts, toasted
- ½ cup pesto
- 1 6-inch wheel of brie, with rind
- 1 egg, beaten
- 1 cup panko bread crumbs
- olive oil
- French bread and crackers for dipping
Instructions
- Heat olive oil in pan
- Dip brie in beaten egg and dredge through panko. Place in olive oil and brown on both sides, being careful when turning over.
- Dilute pesto with olive oil to desired consistency, spread pesto on plate, place sautéed brie on pesto, sprinkle toasted pine nuts over brie
