Ahhhh…..we remember pancake breakfasts on the shores of Lake Michigan. Big fluffy pancakes, filled with the fruit of the season. Raspberry, blueberry, or good ole’ fashioned plain but with walnuts sprinkled on top were on the table many mornings for everyone to gobble up. Served with warm syrup literally harvested from a tree near my grandparents’ home….we can taste them right now. While we love a good ole’ fashioned pancake, we also crave a heartier pancake, so we took a family recipe and added some oatmeal to it. Of course, we needed to make a pumpkin version. So here it is!  We hope you enjoy it. Be sure to serve these with plenty of warmed REAL maple syrup. Sprinkle walnuts on top if that makes you happy!

pumpkin spice oatmeal pancakes

Ingredients

  • ¾ cup oats
  • 1 ½ cups buttermilk
  • 1 ¼ cups flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 eggs
  • 3 tablespoons sugar
  • ¾ cup pumpkin puree
  • 3 tablespoons melted butter
  • butter for cooking
  • 1 cup chopped walnuts, optional

Instructions

  1. Mix oats with buttermilk and set aside.
  2. Combine flour, baking powder, salt and cinnamon.
  3. In separate bowl, beat eggs, add sugar and pumpkin.
  4. Add oats/buttermilk mixture to egg mixture and blend.
  5. Add dry ingredients.
  6. Mix well.
  7. Add melted butter.
  8. Melt butter on griddle.
  9. Using a ¼ cup measure, drop on to hot griddle.
  10. Flip when set, approximately 2-3 minutes.
  11. Serve with butter and warmed maple syrup.

Notes

Garnish with chopped walnuts (optional).
