Summers in the South are a different kind of hot. Sweltering might be a better word honestly! This means we are  always searching for satisfying recipes that are not too heavy. This shrimp salad was created on one hot summer day long ago. Cool tender shrimp meets jalapeño and avocado dressing. Can’t beat it in the heat. It fits the bill. It is simple, refreshing and absolutely delicious!

Ingredients

For the salad:
  • 2 pounds shrimp, cooked, peeled, deveined
  • 1 cup celery finely chopped
  • 1 cup red onion, finely chopped
  • 2 tablspoons jalapeno, finely chopped
For the dressing:
  • 1 avocado
  • ¼ cup plain greek yogurt
  • 1 tablespoon lime juice
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 teaspoon salt

Instructions

  1. Combine shrimp with celery, red onion and jalapeno.
  2. Make dressing: whisk all together, serve immediately.
  3. Can make shrimp and vegetables ahead of time, but dressing needs to wait until right before you serve.
