Beef tenderloin, we all know, is an incredibly delicious piece of meat. But it can be tricky to serve to a crowd. Everyone likes their steak cooked a different way, right? This stroganoff is an amazing way to serve tenderloin. We often refer to this as our “company’s coming” stroganoff. Strips of beef, sauteed with mushrooms in a creamy yogurt based sauce. (I skipped the sour cream.) Served over whatever noodles you choose. This meal goes together quickly too.

Traditionally beef stroganoff is served over a wide egg noodle. We prefer a heartier noodle and LOVE this brown rice fusilli. It makes the stroganoff even more elegant for company!

You start by slicing the beef, add the onions and spices and let it sit for a few minutes. Saute the mushrooms and transfer to a plate. In the same pan, saute the beef over medium-low heat. Keep the meat moving, you don’t want to burn it, just brown it. When the meat is browned, add the mushrooms broth and worcestershire and let it simmer until heated. Turn heat to low and add the yogurt. Add the pasta, stir it well and you’re ready to eat! Enjoy!

Ingredients

  • 1 ½ lbs beef tenderloin, cut into strips
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 2 cloves garlic, minced
  • 1 white onion, diced
  • 16 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 teaspoon worcestershire sauce
  • 1 cup plain whole milk Greek yogurt
  • 8 oz brown rice fusilli, cooked and drained
  • Olive oil for cooking
  • Fresh thyme, for garnish

Instructions

Combine tenderloin, onion, salt, pepper, and garlic. Set aside. Cook pasta. While pasta is cooking, heat olive oil in 10 inch skillet and saute mushrooms. Remove mushrooms from skillet, add 1 T olive oil to skillet and add meat mixture. Saute meat mixture until meat is browned. When meat is fully browned, add cooked mushrooms, beef broth and worcestershire. Cover and heat thoroughly. Add yogurt slowly and stir to melt. Add pasta directly to pan and stir to combine.
