We love a good shrimp and grits. In fact, we usually make a side of them for Thanksgiving dinner! But these cheese grits take our favorite meal to a new level.
We have added Trader Joe’s Unexpected Cheddar Cheese to them. The best way we can describe grits with this cheddar is that they are unexpectedly delicious! They melt in your mouth with the sharp cheesy taste of white cheddar cheese and tender, garlicky-bacon laced shrimp. We are so excited to share them with you!
Printunexpected cheddar cheese grits and shrimp

Ingredients
- 4 cups water
- 1 cup stone ground white grits
- 1 teaspoon fine sea salt
- 1 ½ cups grated unexpected cheddar cheese
- 2 lbs shrimp, peeled, deveined, tails removed
- 6 slices of bacon
- ½ cup sliced scallions
- 1 clove garlic
- 2 tablespoons parsley
Instructions
- Prepare grits: add salt and water to pot and bring to a boil. Add grits and cook until they are thickened but still slightly runny, approximately 20-25 minutes. Remove from heat and add cheese directly to pan. Stir to combine and melt cheese.
- Slice bacon in half and cook in 12 inch pan. Remove from pan, reserve.
- Add garlic to bacon drippings and cook until fragrant. Add shrimp and cook until pink. Add scallions and reserved bacon. Saute 3 minutes.
- Place grits on a platter or on individual plates (whichever you prefer). Top with shrimp mixture.
