Are you planning your holiday menus yet? We are! Add these party sandwiches to your list. They are a crowd pleaser! We season a tenderloin with our favorite spices, bake it, and slice it thinly. You can refrigerate at this point if you want. Make the horseradish cream, get some great ciabatta and arugula and put these together. They will fly off your buffet table!

Ingredients

Tenderloin
  • 1 lb beef tenderloin
  • 2 tablespoons butter, softened
  • 1 teaspoon soy sauce
  • 1 clove garlic, minced
  • 2 teaspoons coarse ground black pepper
  • 1 teaspoon dried rosemary, crushed (can also use powdered)
  • 4 medium size ciabatta or french rolls
  • Arugula leaves
Horseradish Cream Sauce
  • 1 cup sour cream
  • 2 tablespoons horseradish
  • 3 tablespoons chives, finely chopped

Instructions

 

  1. Preheat oven to 450 degrees.
  2. Mix butter, soy sauce, garlic, pepper and rosemary. Place tenderloin in roasting pan and spread butter mixture liberally all over meat. Cover and refrigerate for 2 hours or up to 6 hours.
  3. Place meat in oven and reduce heat to 400 degrees. Cook approximately 30 minutes. Slice to check for preferred level of doneness. Remove from oven and slice thinly.
  4. Make horseradish cream sauce. Mix ingredients together. Chill until ready to serve.
  5. When ready to serve, warm rolls. Slice rolls in half, add beef, arugula and horseradish cream.

Easy to double, triple, or quadruple this recipe.
